1. In a small skillet, heat the oil over medium-high heat. Add the garlic and stir, lightly frying for about a minute, removing before the garlic gets too brown (it can be golden). Pour the garlic and oil into a mixing bowl and allow to cool slightly.
2. Add the red and yellow tomatoes, balsamic and basil to the bowl. Sprinkle with salt and pepper. Toss to combine, and then taste and add more basil if needed, and more salt if needed (don't over salt, though!) Cover and refrigerate for an hour or two if you have the time.
3. Cut the baguette into diagonal slices to allow for the most surface area possible. Melt 4 tablespoons of the butter in a large skillet and grill half the bread on both sides, making sure they're nice and buttery. Cook until golden brown on both sides. Repeat with the remaining 4 tablespoons butter and the other half of the bread.
4. To serve, give the tomato mixture a final stir, and then spoon generously over the slices of bread. Serve on a big platter as a first course or appetizer.

1. The bread is best sliced 1cm thick and toasted on a barbecue, but it can also be done in a griddle pan for ease at home. After that it should be lightly rubbed a couple of times with a cut clove of garlic, then drizzled with some good extra virgin olive oil and sprinkled with salt and pepper. The toppings can be as humble or as luxurious as you like, from chopped herbs or a squashed tomato with basil, to marinated vegetables or beautiful cheeses, to lovely flaked crabmeat. The only rule is that whatever goes on top of a bruschetta should be nice and fresh and cooked with care. These are my favourite toppings. They will each cover 4 to 6 slices.

4. tomato and basil bruschetteIf you have a large loaf, cut it in half, then slice it crossways about 1cm thick. Chargrill these slices on a barbecue or in a griddle pan until they are crisp on both sides, then lightly rub each piece a couple of times with a cut clove of garlic. Drizzle with some good extra virgin olive oil and sprinkle with a tiny pinch of salt. You can eat the toasted bread just like this, but make sure the oil is the best you can find otherwise it will never taste good.

Frequently Asked Questions

What are the best bread types for making bruschetta?

What goes good with bruschetta?

Most wines will pair, but stay away from sweeter wines. Also depends on how the bruschetta is made and type of sauces used. In most cases, white: Pinot Grigio, Chardonnay, old world whites, or dry champagne will pair just fine. For reds: Pinot noir, a lighter Cabernet, old world reds, and blends will pair well.

What are the ingredients in bruschetta?

Bruschetta with cream cheese, tomato, olive, and basil. Ingredients for a bean-topped variety include white beans, chopped plum tomatoes, Kalamata olives, olive oil, salt and pepper. After the bread is toasted and drizzled with olive oil, it should be sprinkled with goat cheese and topped with the bean mixture.

What is a good recipe for bruschetta?

Tuscan Bruschetta. Directions Mix together tomatoes, nuts, onions, cheeses, salt and pepper. Spread 1 to 2 tablespoons of this mixture on each bread slice. Bake at 400 degrees F for 6 to 8 minutes or until golden brown. Serve immediately.
