2. In a second medium mixing bowl, combine the eggs and milk. Add egg mixture all at once to the dry mixture. Stir until just moistened. (Batter should be lumpy).
3. For standard-size pancakes, pour about 60ml (1/4 cup) of batter onto a hot, lightly greased griddle or non-stick pan. Cook over medium heat about 2 minutes on each side, or until pancakes brown, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry.

1. Preheat oven to 200 degrees F. Prepare a piece of aluminum foil to place cooked pancakes on, so they can stay warm in the oven while the others are cooking. Sometimes I like them even better after a little time in the oven.
2. In a small bowl, stir together flour, sugar, baking powder, salt, and cinnamon. In a large bowl, whisk together milk, oil, egg, and vanilla until fully combined. Add the flour mixture and whisk until combined with very few lumps. It is vitally important to whisk or the batter will be too lumpy.
3. Heat a large skillet over medium heat. I use stainless steel, but non-stick or cast iron would also work. When hot, add some vegetable oil and carefully swirl it around to coat the entire pan.
4. Spoon 3 heaping tablespoons of batter for each pancake (or more or less depending on the size you want). Do not crowd the pancakes. Cook for 1-2 minutes, until bubble are on the surface of the pancake and starting to burst. Flip the pancakes over and cook for about 1-2 minutes more until light golden brown on both sides. Transfer to foil and place in oven, while cooking the remainder of the batter. Serve as soon as possible with syrup, preserves, and fruit.

Slowly pour milk mixture into flour mixture while whisking constantly until batter is just moistened and evenly mixed. Lumps are fine.
3. Combine brown sugar, 1/4 cup melted butter, and cinnamon in a small bowl. Place a 1-quart resealable bag into a glass or cup. Pour cinnamon mixture into the bag; refrigerate until filling is as thick as toothpaste, about 10 minutes.
4. Mix 1/4 cup softened butter and cream cheese together in a microwave-safe bowl; heat in microwave for 40 seconds. Stir mixture with a whisk or fork until smooth. Estimated Reading Time: 7 mins
1. First, prepare the cake batter. The trick for using cake batter to make pancakes is to add less liquid than it calls for on the box. I used a box that called for 1 cup of water and 1/2 cup of vegetable oil. I added only 1/2 cup of water and it was the perfect thickness. If you are using a mix that calls for slightly different ingredients, just add 1/2 cup less liquid. Set the batter aside while you prep the other ingredients.
2. To make the cinnamon sugar for the cinnamon swirl, just whisk all the ingredients together. Pour into a pastry bag or plastic bag and slice a small hole in the tip.
3. For the toffee sauce, melt the butter in a saucepan over medium heat. Add the sugar, and stir frequently until the mixture becomes golden brown. Then whisk in the cream and vanilla. Let simmer and thicken until the sauce is thick enough to stick on the back of a spoon. Keep warm over very low heat.
4. To prepare the cream cheese frosting, beat the cream cheese in the bowl of an electric mixer. Once whipped, melt the butter, and slowly add it in while the mixer is running. Once the butter and cream cheese are well mixed, add the powdered sugar and vanilla and mix until smooth.
