At first it will seem like it won't incorporate, but rest assured if you keep mixing it on medium-high speed, it will. Your dough should be shiny, thick, and smooth. When you pull your spatula or paddle from the bowl, the dough should form a V shape without being runny. When you drizzle some dough back onto itself, it should mostly hold its shape for 10-15 seconds.

1. If using vanilla bean pods, split the bean and scrape the vanilla seeds/caviar out of the beans.
2. Add the bean and caviar with the milk into a saucepan. Heat the milk over medium high heat and bring it to a simmer, almost to a boil. (See notes)
3. While the milk is being heated, place the sugar, egg and yolks, cornstarch and salt in a bowl. Whisk until you have a thick, smooth mix. (If you are using vanilla bean paste or extract, add it to the egg mix too). Place the bowl with the egg mix on a towel or napkin (to prevent the bowl from slipping while whisking, in the next step), and set aside until the milk comes to a boil (almost to a boil).
4. As soon as the milk starts to simmer / bubble, remove it from the heat. Slowly pour about a half of the hot milk in a thin stream, into the egg mix, WHILE WHISKING CONSTANTLY to temper the egg mix. When the eggs have been tempered, add the egg mix back into the hot milk in the saucepan.

2. Slice pieces of butter by tablespoons or smaller, and drop them into the flour mixture, stopping periodically to cover the butter pieces with more gfJules flour by tossing together (total flour used will be around 3 cups when flour is added to the counter or pastry mat).
3. When all the butter is in the flour mixture, begin chopping into the flour with a pastry blender, bench scraper or two butter knives cutting against one another like scissors. Chop and toss together until a pebbly meal is formed – you are not trying to eliminate the chunks altogether, just make them roughly equal and well-integrated.
4. Begin gradually adding in the cold water by pouring into the flour and using your pastry blender to mix all together until it can form a ball of dough. You may need slightly less or more than ½ cup, but work the water into the flour well before adding more than ½ cup, as the more you work with the dough, the more moisture is released into the dough from the butter, and you don't want to make the dough overly wet.
