1. To make the chili oil: In a small pot, add the Sichuan peppercorns, cinnamon stick, star anise, and oil. Over medium low heat, slowly heat to 325 degrees, and then turn off the heat. Wait 6 - 7 minutes, then remove the peppercorns, cinnamon stick, and star anise with a slotted spoon. Add the crushed red pepper flakes and allow them to steep in the hot oil. It should start smelling fragrant, almost like popcorn. Allow the oil to cool. This makes more chili oil than you’ll need, but you’ll be glad to have it on hand for use in other dishes. Store in a glass jar and keep refrigerated.
2. To make the meat mixture: In a wok, heat a teaspoon of oil over medium heat, and brown the ground pork. Add the sweet bean sauce, shaoxing wine, dark soy sauce, and five spice powder. Cook until all the liquid is evaporated. Set aside. Heat the other 2 teaspoons of oil in the wok over medium heat, and sautee the sui mi ya cai (pickled vegetables) for a few minutes. Set aside.
3. To make the sauce: Mix together all the sauce ingredients. Taste and adjust seasoning if you like. You can loosen it with more hot water, add more Sichuan peppercorn powder, etc.
4. To prepare the noodles and veggies: Cook the noodles according to package directions and drain. Blanch the greens in the noodle water, and drain.

2. Cook the Minced "Pork" Topping. In a non-stick pan, heat up vegetable oil on medium-high heat and cook the TVP and mushrooms until most moisture evaporates. Add the garlic, ginger, soy sauce, Shaoxing wine, doubanjiang, and five spice. Cook together, occasionally stirring until golden-brown and crispy — this could take up to 10 minutes. Once crumbly and crispy, remove from the heat and set aside.
3. Make the Spicy Sauce. Simply add all ingredients to a bowl and whisk to thoroughly combine. Note for a simplified version of the spicy sauce (as I've showed in recipe video): Heat up 4 tablespoons of neutral oil and pour it over 4 cloves of minced garlic, 2 tablespoons of red chili flakes, 1 tablespoon of sesame seeds, and 1-2 teaspoons of ground Sichuan pepper. Then finish with soy sauce, dark brown sugar, black vinegar, and peanut butter. Stir to combine.
4. Prepare Toppings. For my Bok choy, I simply blanched them in lightly-salted boiling water for around 45 seconds. Prepare any additional toppings as desired. Other great toppings are crushed peanuts, thinly chopped scallions (not pictured), etc.

1. Easy Chili Oil: Add all of the spices to a heat proof bowl; set aside. Add vegetable oil to a small saucepan and heat over medium heat for 2-3 minutes, until 325 degrees F (no hotter). Very carefully pour oil over the spices. Whisk in sesame oil; set aside. Start boiling the water for the noodles so it’s ready to cook them later.
2. Sauce: Mix all Dan Dan Sauce ingredients together except chili oil until smooth then whisk in 2-4 tablespoons chili oil (see notes). Set sauce aside and reserve leftover chili oil.
3. Pork: Heat oil in a skillet or wok over medium-high heat. Once very hot, add pork and cook and crumble. Once almost cooked through, add the rest of the pork ingredients and cook for 1-2 minutes until the liquid is absorbed/evaporated. If the pork isn’t crispy at this point, increase heat to high and cook another 1-2 minutes; transfer to a bowl.
4. Sui Mi Ya Cai: Reduce heat to medium. Heat 2 teaspoons of oil in the now empty skillet. Add the sui mi ya cai and sauté for 60 seconds to warm through; set aside.
