1. Melt the cacao butter in a double boiler. You can use a heat-proof metal, glass or ceramic bowl and place the bowl over a saucepan partially filled with simmering water. Make sure your bowl is not touching the water or the bottom of your saucepan. Stir the melting butter frequently as this speeds up the process.
2. When most of the cacao butter is melted, add maple syrup, and vanilla and salt (if using). Remove the saucepan from the heat.
3. Add the cacao powder when your butter has completely melted (or only tiny pieces are left). Stir chocolate until well combined and no lumps are left.
4. Pour into molds or create your own shape by making chocolate slabs. You could also use small containers and only fill them up to about a quarter of an inch / 5mm. Once the chocolate is cool, it comes off easily. Chinese take-away containers have worked very well for me before.

8 hours ago Homemade raw dark chocolate bars are made by melting cocoa butter, cocoa powder, honey and the flavouring of choice together, and then …

Servings: 4
Total Time: 30 mins
1. This homemade dark chocolate bars recipe is so easy and has so few ingredients you can make it as often as you like. The only utensil you need is a bowl that you will put on top of a pot containing boiling water on medium heat. In the bowl goes the cacao butter. Let it melt slowly. Cacao butter is the key ingredient that makes chocolate health benefits skyrocket, so it is very important not to burn it as that would make chocolate health benefits disappear. Cacao butter is not only good in the kitchen, it actually is a well kept beauty secret as well, and can be used in soaps and creams. Check this Onehowto.com article on how to make chocolate soap. When it melts, you can add honey or agave syrup and stir gently. When those two ingredients are well combined together, you add the cacao powder. This homemade chocolate recipe calls for low fat cacao powder in order to keep dark chocolate calories low.
2. Now, the optional ingredients. At this stage, the homemade raw chocolate bars recipe completely depends on your own taste. You can add a stemmed vanilla bean, lemon zest, a pinch of salt, chilli or ginger powder, or a combination of 2 of those ingredients in your homemade raw chocolate bars recipe. Just two suggestions: do not add too much of the additional ingredients, especially if you are making this recipe for the first time, as it is very easy to spoil the delicate balance of flavor. Also, do not add fat or artificial flavoring, as that would make the chocolate health benefits vanish and the dark chocolate calories go up.
3. Now, give all of your ingredients one last whisk and let the mixture cool down a little, not too much as you need to be able to model it into raw chocolate bars. You can also taste your homemade chocolate now to see if you want it sweeter. To make the raw chocolate bars, form two balls and then spread each one of them on a piece of parchment paper. Fold the paper and play with the raw chocolate with your hands until you form two thin raw chocolate bars. Let them sit in the fridge and firm up for about 30 minutes.
4. Now, the last step of this homemade raw chocolate bars recipe: taste your creation! And remember, you can eat (almost) as much homemade raw chocolate bars as you like because of the many dark chocolate health benefits and the very low chocolate calories.

1. Prepare a small mold or tin. Use a 6-inch by 6-inch (15-cm by 15-cm) tin and line it with wax paper or parchment paper. You could use candy molds instead of a tin. Most molds do not need to be prepared in any special manner. Just make sure that the molds are clean and dry before use.
2. Heat water in a double boiler. Fill the bottom portion of a double boiler with roughly 1 inch (2.5 cm) of water. Place the double boiler on the stove and heat on medium until the water starts simmering. If you do not have an actual double boiler, place a heat-resistant bowl or pan over a saucepan. The lip of the bowl should be able to rest on the lip of the saucepan, and the bottom of the bowl should not extend low enough to touch the surface of the water in the saucepan.
3. Melt the cocoa butter. Place the cocoa butter in the top part of your double boiler and heat it gently, stirring occasionally, until the block of butter completely melts. The cocoa butter should reach a temperature of 122 degrees Fahrenheit (50 degrees Celsius). Monitor the temperature using a candy thermometer. Consider breaking or cutting the cocoa butter into similarly sized pieces before adding it to the double boiler. Doing so ensures that the butter will melt quicker and at an even pace. Note that cocoa butter melts quickly and you should not allow it to overheat. In fact, you may want to turn the heat setting down from medium to low or medium-low. Chocolate that becomes too hot will develop a pale white coating known as "bloom." True dark chocolate uses cocoa butter. If you are searching for a slightly healthier alternative, however, you can swap out the cocoa butter for coconut oil. The coconut oil should be melted and treated in the same way throughout the recipe.
4. Combine the cocoa powder, sweetener, and vanilla separately. Stir the three ingredients together in a medium bowl until evenly mixed. You can use any cocoa powder for this recipe. Refined cocoa powders have a great taste, are easier to find, and less expensive, but the refining process removes some of the antioxidants of the cocoa. Natural or unprocessed cocoa powder is packed with more antioxidants and is the healthiest option. Use sugar, honey, or maple syrup for your sweetener. Note that dark chocolate prepared with sugar can be stored at room temperature but chocolate prepared with honey or maple syrup will need to be refrigerated. The amount of sweetener you use will change the cacao percentage of the dark chocolate.Using 1 Tbsp (15 ml) produces 85% dark chocolate. Using 1-1/2 Tbsp (22.5 ml) produces 73% dark chocolate. Using 2 Tbsp (30 ml) produces 60% dark chocolate.

1. For the crust: Position an oven rack in the center of the oven and preheat to 350 degrees F. Spray a 6-inch springform pan with cooking spray to coat the bottom and sides.
2. Add the graham crackers to a resealable plastic bag. Using your hands or a rolling pin, crush the graham crackers into crumbs. Transfer them to a mixing bowl and add the melted butter. Fold and press together with a spatula until a loose, crumbly mixture is made. Pour the mixture into the bottom of the prepared pan and press to create an even base for the cheesecake. Chill the crust in the fridge while you make the filling to set the base.
3. For the filling: Add the chocolate to a heatproof bowl and set the bowl over a pan of simmering water. Heat, stirring with a spatula, until the chocolate is melted and completely smooth. Set aside.
4. Mix the cream cheese, sugar and cocoa powder in a food processor until smooth. Remove the lid and scrape down the sides of the bowl. Add the vanilla, salt and egg and process until completely incorporated. Scrape down the sides once more. Turn the machine back on and while the machine is running, drizzle in the melted chocolate and allow it to completely incorporate into the mixture.
