1. Pour the pecans into a large skillet and toast, stirring often, over medium heat until fragrant (don’t let them burn!). This will take about 4 to 8 minutes.
2. Pour the toasted pecans into a food processor or high-speed blender and let them cool for several minutes. Then blend the pecans, pausing to scrape down the sides with a spatula often. The mixture will be crumbly at first, but will eventually blend into super-creamy goodness. Be careful not to let the mixture get too hot, which seems to cause oil separation. You might have to stop and let the mixture/machine cool down for a bit just to be safe. The amount of blending time required really depends on your machine—my old food processor took ten to fifteen minutes to turn the pecans into pecan butter, but my fancy Blendtec and Vitamix blenders can turn it into butter in a minute or two.
3. Add a pinch of sea salt and a dash of cinnamon (if using). Blend again, taste, and add more salt or cinnamon if needed.
4. Pour into a small jar, seal it with a lid, and store it in the refrigerator for good measure. This pecan butter will keep well, refrigerated, for up to 1 month or so—obviously, don’t eat it if you see or smell any signs that it has gone bad.

2. 2. Rub hot pecans between two clean kitchen towels to remove the skins. Let cool to room temperature, about 15 minutes.

(Using a Vitamix) Place the cooled, toasted pecans and sea salt into your Vitamix and, after gradually increasing the power to high, use the tamper to press the pecans into the blades until a smooth, creamy pecan butter forms. 2. Transfer the toasted pecans to your food processor and begin processing. Stop to scrape down the sides, as needed and give your machine a 30-60 second break to prevent overheating. The pecans will go from whole, to crumbly, to flour, to clumps and eventually creamy pecan butter. Depending on your appliance, this will take anywhere from 2-6 minutes.
3. Once smooth, add any or all of the optional fill ins (if using) and pulse until combined.
4. Store in a clean and dry glass jar or container, and use as desired.

2. In a large bowl, whisk together the flour, baking soda, baking powder, and salt, and set aside.
3. In the bowl of a stand mixer, or use a hand mixer, beat the butter on high speed until very light and creamy, about 1 minute. Add the brown sugar and mix on medium speed until the sugar is incorporated and the mixer is smooth and creamy with no lumps of sugar remaining. Add the eggs and vanilla and mix on medium speed until ingredients are well combined. Add one half of the sour cream, followed by 1/2 of the dry ingredients and repeat with the second half of each. On the final addition of the dry ingredients, mix only long enough to incorporate. Do not over mix.
4. Drop about 4 to 5 dates into the cookie dough. Slightly press each date into the dough, just enough to make sure there is dough on the bottom of each date. Using a tablespoon, scoop up a date and some dough and transfer to an ungreased cookie sheet, spacing them about 2 inches apart. Make sure each date is totally covered with the cookie dough. (I tried using a cookie scoop for this, but it didn’t work too well).

1. To prepare dough, dissolve 1 teaspoon granulated sugar and yeast in 3/4 cup warm water; let stand 5 minutes. Combine 1/3 cup granulated sugar, 3 tablespoons butter, salt, and egg in a large bowl. Add yeast mixture; beat with a mixer at medium speed until blended.
2. Lightly spoon flour into dry measuring cups; level with a knife. Gradually add 3 cups flour to yeast mixture, beating mixture on low speed until a soft dough forms. Turn dough out onto a lightly floured surface. Knead until smooth and elastic (about 5 minutes); add enough of remaining flour, 1 tablespoon at a time, to prevent dough from sticking to hands. Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place (85°), free from drafts, 1 hour or until doubled in size. Punch dough down; turn out onto a lightly floured surface.
3. To prepare filling, combine brown sugar, cinnamon, and rind in a small bowl. Roll dough into a 15 x 10-inch rectangle; brush with 2 tablespoons butter. Sprinkle brown sugar mixture over dough, leaving a 1/2-inch border. Sprinkle dates and pecans over sugar mixture. Beginning with a long side, roll up jelly-roll fashion; pinch seam to seal (do not seal ends of roll). Cut roll into 18 (1/2-inch) slices. Place slices, cut sides up, in a 13 x 9-inch baking pan coated with cooking spray. Cover and let rise in a warm place (85°), free from drafts, about 1 hour or until rolls have doubled in size.
4. Preheat oven to 375°.

1. Preheat oven to 350 degrees F. Evenly spread pecans on an ungreased baking sheet. Toast pecans in oven for 7-9 minutes, being careful not to burn nuts. Mine were perfectly toasted at 8 minutes. Remove from oven and allow nuts to cool for a few minutes.
2. Add pecans to food processor and process for 5-10 minutes, scraping down the sides as necessary. At this point the pecan should start to clump together. Continue to process until you reach the desired consistency.
3. Add in maple syrup, cinnamon, vanilla, and salt and process again until smooth. If the nut butter starts to thicken up too much, you can add 1-3 teaspoon of coconut oil and process again until smooth.
4. Transfer to mason jar or container and store at room temperature or in fridge. If you store at room temp, simply give the pecan butter a stir before you use it.

Frequently Asked Questions

How do you make pecan pie with dates?

Transfer dates and remaining liquid to a food processor; puree until smooth. In a large bowl, whisk together eggs, 3/4 cup date puree (reserve remainder for another use), corn syrup, brown sugar, butter, and salt until smooth; stir in chopped pecans. Pour filling into crust; arrange reserved whole pecans over top.

How to make pecan butter cookies?

To prepare filling, mix together dates, sugar and water in saucepan and cook over low heat, stirring constantly, until thickened (about 10 minutes). Allow to cool. Add pecans. Preheat oven to 400 degrees. Cream butter and brown sugar. Combine remaining ingredients and stir into butter mixture until well blended.

How to make gummy pecans with dates?

Place the dates in the bowl of a food processor along with the oil and puree until smooth. With my high-speed food processor, it took about a minute or two to get the dates to a gummy consistency. Remove the pureed date mixture to a small bowl. In the same food processor bowl, add the now cooled pecans.

How long does it take to make pecan butter in a blender?

The amount of blending time required really depends on your machine—my old food processor took ten to fifteen minutes to turn the pecans into pecan butter, but my fancy Blendtec and Vitamix blenders can turn it into butter in a minute or two. Add a pinch of sea salt and a dash of cinnamon (if using).
