4 hours ago Line a 12-by-17-inch rimmed baking sheet with a silicone mat or nonstick foil. Use an offset spatula to spread the fruit on the mat or foil into a thin layer. Bake

Rating: 5/5(12)
Difficulty: Easy
Author: Food Network Kitchen
Steps: 16
1. Preheat the oven to 200 degrees F. Combine the fruit and sugar in a blender. Add the lemon juice to taste (use 2 tablespoons for apples or bananas) and puree until smooth.
2. Transfer the pureed fruit to a medium saucepan and bring to a simmer over medium-high heat. Reduce the heat to medium low and cook, stirring occasionally at first and then more often toward the end, until most of the liquid evaporates and the mixture is very thick, 35 to 45 minutes. Be careful: The mixture may splatter.
3. Line a 12-by-17-inch rimmed baking sheet with a silicone mat or nonstick foil. Use an offset spatula to spread the fruit on the mat or foil into a thin layer. Bake until barely tacky, 3 hours to 3 hours, 30 minutes.
4. Transfer the baking sheet to a rack and let the fruit leather cool completely. Peel off of the mat or foil. If the leather is still moist on the underside, return it to the oven, moist-side up, until dry, about 20 more minutes. Lay the leather smooth-side down on a sheet of wax paper and use kitchen shears to cut it into strips on the paper. Roll up the strips and store in zip-top bags for up to 1 week.

1. Preheat oven to 140 degrees (or as low as your oven will go). Line a rimmed half-size sheet pan with parchment paper or a silicone mat. You can use a larger pan, but your mixture will not cover the full sheet pan.
2. In a food processor or blender, puree the fruit with the sweetener and lemon juice until perfectly smooth.
3. Pour pureed fruit onto the prepared pan and use an offset spatula to evenly spread the fruit out so that it is about 1/4 inch thickness. Be sure to spread your fruit mixture thin, but without any holes.
4. Place in oven and bake for 4-6 hours, until set and no longer sticky to the touch. It can take up to 8 hours to cook these fruit roll-ups if your fruit has high moisture content and your oven is set at 150 degrees. I have only ever had to bake my fruit roll-ups for 5 hours. But you may need longer. Check every 30 minutes and remove from oven when no longer sticky to the touch.

1. Place the trimmed strawberries in a blender or food processor and puree them for a minute or so until smooth. You don’t want any strawberry chunks in the mixture.
2. Transfer the strawberry puree to a saucepan and add the lemon juice and sugar, if using. Turn the heat to medium high, and cook the mixture for about 10 minutes, stirring frequently, until the mixture is thick and jammy. The goal here is to cook out much of the moisture.
3. Preheat the oven to 170 degrees F, or as low as your oven will go, making sure it’s less than 200 degrees at the highest.
4. Spread the strawberry jam into a rectangle shape onto a baking pan lined with a silpat or parchment paper. You may use an offset spatula or a regular spatula to help spread the mixture as evenly as possible, until the rectangle is about 1/8 inch thick. Keep in mind the fruit leather will lose some of its thickness in the oven as it dehydrates, so make sure that none of the jam is so thin that you can see through it as you spread.

1. Preparation: Line a 12x17 cookie sheet with a silpat or foil that is lightly brushed with vegetable oil and then wiped down with a paper towel (only a little bit of oil is needed).
2. Pit and chop peaches (leave skins intact). Places pieces in a blender or food processor and pulse until pureed. Transfer pureed mixture to a heavy bottom pan. Taste mixture and add sugar to preferred sweetness. Stir in lemon juice. Bring mixture to a boil and then lower to a simmer. Cook and stir every now and then until mixture thickens and clumps when scooped with a spoon, about 1 hour. Stir more frequently the last 20 minutes so mixture at the bottom of pan does not burn.
3. Pour mixture onto prepared bake sheet, then using an off-set spatula spread to an 1/8 inch thickness. Bake at 190 degrees until fruit leather is tacky, but does not stick to your fingers, about 3 hours. Let cool completely. Once cooled place smooth-side down on wax paper and cut to desired strip size. Roll up strips and store in an airtight container for up to 1 week.

1. Pure your berries of choice in a high speed blender until super smooth (I love doing 2 parts strawberries 1 part raspberries!). Sieve out the seeds from your fruit puree.
2. Spread 1 cup of smooth berry pure per baking tray (half sheet size) as evenly as you can, without leaving translucent streaks. I prefer to use a baking mat for smoother results, but lining the tray with parchment paper works great too. And you can always mix different berry flavors in the same tray!
3. Dehydrate in your oven at the lowest possible temperature (140-170°F/60-75°C) for 3-4 hours until the center is just no longer sticky to touch. If your oven is old school, you can always leave the door slightly ajar. As a good rule, check in every 30 minutes the first time you whip them up. And you can always dehydrate 2-3 trays at the same time.
4. Peel off the fruit leather gently off the baking mat and cut in desired shape. It's possible that the texture feels a little dry, but keep in mind that it will become sticky overnight, so you'll want to roll up the pieces using parchment or wax paper to keep it from sticking. And if you baked on parchment, just cut up the strips along with the paper. The edges can be a little dry, so just trim them off and enjoy as 'fruit chips!'.
