8 hours ago This is a terrific authentic Chicago stuffed pizza recipe. I moved away from Chicago in 1993 and apart from a couple of visits over the years I'd never found a way to buy or make a good version of my favorite pizza until using this recipe. I even looked into Giordano's mail order service at my most desperate - thanks for saving me that 75!

1. Preheat the oven to 475 degrees F.
2. Roll and stretch out the risen dough on a floured work surface into a rope about 31 inches long. Press a rolling pin into the dough to create a trench and roll it to a rectangle about 3 inches wide.
3. Keeping a 1/2-inch border on each long side of the dough, smear the remaining dough with the olive oil and sprinkle with salt. Spread the surface with a nice thin layer of the Arrabbiata Sauce, then sprinkle with the Parmesan, mozzarella and pepperoni. Arrange the string cheese pieces on top in a double line. Fold the long sides of the dough up over the center (over the string cheese) and pinch the edges together well so there's no leakage. Bring the ends together to form a circle.
4. Drizzle a baking sheet with olive oil. Carefully transfer the dough circle to the prepared baking sheet, flipping it over before putting it on the sheet so the seam side is down. Brush the egg wash over the surface of the dough. Bake until the edges of the crust are golden brown and the cheese is melted and bubbly, about 15 minutes. Transfer to a board to rest for 10 minutes before cutting.

1. To make the crust: Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess.
2. Combine the dry ingredients and the oils and butter, mixing until crumbs form.
3. Then add the lower amount of water, and mix and knead — by hand, stand mixer, or bread machine set on the dough cycle — to make an elastic, fairly stiff dough, adding more water if necessary; you'll use less in the summer, or if you substitute all-purpose flour for the semolina; and more in the winter, or if you're in a dry climate., Place the dough in a large, greased bowl; cover, and let rise at room temperature for 1 hour.
4. For best flavor, after its initial 1-hour rise, refrigerate the dough for several hours, or for up to 24 hours.

1. Make the dough for the pizza one to two days before you plan to build the pizza. You can make the dough in a standing mixer or stir it by hand. Start by dissolving the yeast and sugar in the water in a small bowl.
2. Combine the flour and salt in a large bowl. Add the oil, margarine and yeast solution, then mix well until the dough forms a ball. Don’t knead the dough too much. Place the dough into a covered container and store it in your refrigerator for 1 to 2 days.
3. Make the sauce by dumping the canned tomatoes into a medium saucepan and cook over medium heat until simmering for 5 minutes, then use a potato masher to smash the tomatoes into smaller bits. The sauce should still be a little chunky. Add the remaining sauce ingredients, except the basil, and cook for 10 more minutes, stirring occasionally. Add the fresh basil and cook for another 5 minutes. Cover and cool. You can make this sauce when you make the dough and keep it stored in your refrigerator until pizza time.
4. A couple hours before you plan to make the pizza, take the dough out of the refrigerator and let it warm up to room temperature. When you are ready to make the pizza, place a pizza stone into your oven and preheat the oven to 425 degrees F.

1. Prepare the pizza dough through step 5, including preheating the oven to 475°F (246°C) as described in step 4.
2. Lift the edge of the dough up to create a lip around the edges. Arrange the string cheese around the edges of the crust, leaving a 3/4 inch space. Fold the edges of the dough over the string cheese, pinching down to seal. Do your best to completely seal the string cheeses inside. Let the dough rest for a couple minutes if you’re having trouble sealing it completely.
3. Top with pizza sauce, the mozzarella cheese, then the pepperoni. Sprinkle lightly with seasoning.
4. Bake for 14-16 minutes or until the crust is lightly browned and the cheese is bubbling. For the last minute, I move the oven rack to the top rack to really brown the edges. That’s optional. Remove from the oven. Slice pizza and serve immediately.
