1. Slice the duck breasts into roughly 1/4 inch thick strips. Mix remaining ingredients well in a large bowl. Put the meat into the marinade and massage it all around to coat evenly. Pour everything into a seal-able plastic bag or container and set in the fridge. Marinate for at least 24 and up to 72 hours -- the longer it is in the mix, the saltier the meat will get, but the more flavorful it will be. During the marinating process, massage the meat around in the bag to keep all the pieces in contact with the marinade.
2. Remove the duck from the bag and pat dry with paper towels. Either follow your dehydrator's instructions for making jerky (I dehydrate mine at 140°F), or lay the strips on a wire rack set over a cookie sheet. Set the rack in an oven set on Warm until the meat is dried out, but still pliable, about 6 to 8 hours. Store either in the fridge indefinitely, or at room temperature for up to 1 month.

2. While the meat is in the freezer, combine the duck sauce, red wine, worcestershire, salt, pepper, mustard, red pepper, and water in a medium bowl or ziplock bag and mix well.
3. Remove the meat from the freezer and slice ¼" strips against the grain. Cut with the grain for a chewier jerky. I had the butcher slice this top round for me eliminating this slicing step. You could also use a Jerky Slicer for evenly sliced strips.

1. For jerky slicing, I like to use pieces of meat that are not completely frozen but also not completely thawed. You want it to be solid enough so that making the thin cuts is easier. For more tender jerky cut across the grain, for more chewy jerky (my preference), cut with the grain. Cut in 1/8" slices and set aside.
2. In a pot add the water, honey, chopped garlic and ginger, salt, and the spices. Bring to a boil then lower the heat to let it simmer until the salt is fully dissolved.
3. Put the mixture into a blender and mix it well. This marinade will need to cool before putting the strips of meat in so I suggest putting it in a refrigerator for a bit to speed that up.
4. Once cool, pour all of it into a 1 gallon plastic bag. If necessary, add a bit of water into the blender and swirl it around to pick up anything stuck to the sides and pour that into the bag.
