"The recipe is great for beginners, but also enjoyable for experienced bakers. It's a standard white bread with no fuss, special ingredients, or advanced techniques. Since it’s so easy, it's a great recipe to familiarize yourself with kneading, proofing, shaping, and scoring, even experimenting with different approaches to each." —Diana Rattray

1. Preheat the oven to 400°F.
2. In a large bowl stir together the active dry yeast, light brown sugar, and warm water. Let it sit for about 5 minutes -- the yeast will bloom in the bowl.
3. Add the flour, olive oil, salt, and herbs. Stir until the flour is mostly incorporated and starts to pull away from the sides of the bowl. It will be mostly smooth -- you can use your fingers to press in any remaining flour bits, but DO NOT KNEAD yet.
4. Lift the dough out of the bowl and make a rough ball (this keeps it from sticking to the bowl too much while proofing). Place it back in the bowl, cover with a kitchen towel, and place the covered bowl on top of the stove above the preheating oven. See note. Let it proof for 20-30 minutes.

1. In a large bowl, dissolve the 1 TBSP of the sugar in warm water and then stir in yeast. Allow to proof until yeast resembles a creamy foam, about 5 minutes.
2. Mix remaining sugar, salt and oil into the yeast. Mix in flour one cup at a time. Dough should be tacky and clean the sides of the bowl save for a small part at the bottom. Too much flour added in yields a dry loaf of bread, so if you're worried you added too much, add a bit more hot water, until you get the correct consistency.
3. Knead dough for 7 minutes. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour.
4. Punch dough down. Knead for 1 minute and divide in half. Shape into loaves and place into two greased 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans.

Personally, I would not serve the original recipe at a dinner party – good bread just takes time. Luckily most of that time is spent rising, so you can do other stuff. Knead the last cup or two of flour into the bread, then let the bread rise in a big oiled bowl somewhere warm (like an oven thats been set to 200 and then turned off.

1. Add the yeast to the stand mixer and in a saucepan heat the whole milk, water and butter until very warm it reaches between 120 and 130 degrees on a thermometer (you don't want it too hot or it will kill the yeast) and add the milk mixture to the stand mixer and let it sit for 5 minutes to proof the yeast (this ensures super fluffy rolls).
2. Add 1 1/2 cups flour, salt and sugar to the stand mixer with the regular whisk attachment for 2 minutes on medium speed before adding 1/2 cup of flour and changing to the dough hook and keeping it on medium speed for another 8-10 minutes until smooth and elastic.
3. Roll the dough into 12 balls and place into 8x8 inch baking pan, covering with a dry, clean kitchen towel in a warm place for 30 minutes (you want the rolls to double in size)
4. Preheat the oven to 375 degrees, brush the rolls with melted butter and bake for 20 minutes.

1. Combine yeast with water and sugar. Give it a quick stir, and let it stand for 5 minutes to bubble (this is not necessary if using instant yeast).
2. In a bowl of a stand mixer, or in a large mixing bowl, combine the yeast mixture with oil, egg, flour, and salt. Knead using a stand mixer with a dough hook, or by hand, until you get a smooth and tacky dough ball.
3. On a lightly oiled surface, divide the dough into 9 balls (around 2oz/60g each).
4. Lightly grease an oven-proof ceramic baking dish (or a quarter baking sheet). And place the dough balls about half-inch apart. Cover with a towel or plastic/saran wrap and allow them to rise for at least 15 minutes. When I'm in a rush, I just let them rest for 15 minutes but if I have more time I let them rest for more until they double in size.
