1. Every step in this recipe is important, so please read through all of them before beginning. Keeping your ingredients really cold is critical to getting beautiful biscuits so don’t skip the chilling times!
2. Add the vinegar to the soy milk. You will have 240 g (1 c) of vegan buttermilk. (If you are measuring your ingredients, add the TBS of vinegar to your measuring cup and then add milk until you have one cup.) Place the “buttermilk” in the freezer and set a timer for 30 minutes.
3. As soon as the “buttermilk” is in the freezer, melt the vegan butter (I use Earth Balance Buttery Spread) in the microwave. This only takes about 30 seconds in my microwave. Let it cool at room temperature.
4. As soon as the vegan butter is melted, whisk the flour, baking powder, sugar, and salt together in a medium-sized mixing bowl. Place the bowl in the freezer.

1. Into a small bowl, whisk together the non-dairy milk and lemon juice, this will make vegan buttermilk
2. Into a food processor, add in the flour, baking powder, sugar, salt, nutritional yeast and dried herbs (if using) and blend until combined (around 10 seconds).
3. Add in the buttermilk and drop in the coconut cream. Pulse blend 5-6 times, just until it starts to look crumbly. From here, it's important to work fast.
4. Transfer the dough onto a parchment lined floured surface. Dust your hands with flour and then pat the dough out into a rectangle, around 1/2 an inch thick. Then fold the dough inward into 1/3 (refer to photo). Use the parchment paper to lift the sides inwards so that you don't have to keep adding flour (to prevent them from becoming too dry). Repeat this step 2 more times.
