1. In a large saucepan, brown half the meat at a time, in 2tbsp (30 ml) of the oil, along with the chili pepper. Add oil as needed. Saltand pepper. Reserve in a bowl.
2. In the same pot, soften the onions, carrots, celery andgarlic in the remaining oil. Salt and pepper. Now you have to add the tomato paste and cook for 1 minute over high heat, stirring constantly.
3. Then add the meat, tomatoes, tomato sauce, broth, oregano and cloves. Bring the spaghetti sauce to a boil and simmer gently for 3 hours,stirring and scraping the bottom of the pot regularly, or until the sauce thickens. Serve over pasta of your choice.
