Green Grape Pie Recipe

Pre-heat oven to 350 F. Mix first 7 ingredients to make a custard. Then mix in the grapes and pour the mixture into the pie shell. Add crust strips to make a lattice. Bake 45 – 50 minutes, or until golden brown. NOTE: grapes can be fresh or frozen. If using frozen grapes, let them thaw before using.

1. To cook grapes: Gather before seeds harden and grapes are developed. A little larger size than gooseberries. Wash and pull off stems and measure. Use 2 cups of grapes, 1/4 cups water and 1 tsp baking soda. Boil, stir and mash as they cook. (In Texas we have the wild grapes-I have not tried this yet- I am going to try it w/store bought green grapes.).
2. Combine the cooked grapes with all other ingredients, pour into a pie crust and top with remaining crust sealing edges. Make slits in the top crust for vents. Sprinkle w/a wee bit of cinnamon and sugar.
3. You may have to use a crust guard or foil over the edges of the pie the first half of baking to prevent browning to fast.
4. Mrs. Dowda notes that this is a fast seller at the church bazaars.

1. Gently crush the grapes with a masher or spoon, strain juice and add to a small sauce pan. Our mashing only yielded about 2 tbsp.
2. Add maple syrup, cinnamon, and flour to the grape juice and bring to a boil over low heat. Whisk well until flour is combined, stir until thickened and remove from heat.
3. Place one crust in bottom of pie pan, add mashed grapes on top. Pour thickened pie filling evenly over the grapes. Top with remaining crust and pinch edges. Pierce top as desired.
4. Pre-heat oven to 425° and bake pie for 15 minutes. Reduce heat to 375° and bake for another 20 minutes. Remove from oven and allow to cool for 15-20 minutes before serving.
