1. Melt ½ tablespoon (7 g) of butter in a frying pan over medium heat. Heat the pan for 1 minute before adding the butter. Tilt the pan in a circle so the butter coats the entire surface. Let the butter melt completely until it starts to bubble. Use a non-stick pan if you have one so your omelet doesn’t get stuck on the bottom. You can replace butter with ⁄2 tablespoon (7.4 ml) of olive oil if you want less saturated fat.
2. Beat 3 eggs together in a small bowl. Crack the eggs into your bowl and use a whisk to combine the yolks and whites. Sprinkle in a pinch of salt and pepper to add flavor to the eggs. Continue mixing the eggs until they’re thoroughly combined. Make sure to pick out any eggshells that may have fallen into your bowl before you start mixing your omelet. Only use the egg whites if you want a leaner, healthier omelet.
3. Pour the eggs into your pan. Once the eggs are beaten together, slowly transfer them from your bowl into the center of your pan. Make sure your pan sits flat so your eggs don’t pool up on one side.
4. Push the eggs around the outside toward the center of the pan. Use a rubber spatula to push the eggs around the edge towards the center of your pan. This allows the raw egg in the middle to run out so it can cook. Continue pushing the eggs towards the middle for about 30 seconds. Don’t overstir your eggs or else your omelet will lose its shape.

Category: Main-Dish
Steps: 3
Difficulty: Advanced
Total Time: 25 mins
1. Beat the eggs with the milk and 1/4 teaspoon salt in a small bowl. Stir the ham and cheese together in another small bowl.
2. Heat a Japanese rectangular omelet pan over medium heat until hot. Brush with little bit of oil. Add just enough of the egg mixture to coat the bottom of the pan when tilted. Let the egg cook until just set on the bottom, then use chopsticks or a rubber spatula to roll the sheet of egg into a log shape and push it to the far end of the pan. Brush the pan with more oil and again add just enough egg to coat the bottom when tilted, this time lifting up the rolled egg so that the raw egg flows underneath it. (If the egg is browning or setting too quickly, control the heat by lifting the pan off the burner for a moment.) When the underside is just set, roll the log towards the handle of the pan, then push the log back to the far end. Repeat; when you have made 3 layers, make another layer in the same manner and add half the ham and cheese. Make another layer, using the rest of the ham and cheese. Finish making the omelet in the same manner with the remaining egg.
3. Turn the omelet out onto a plate, sprinkle with chives and serve.

1. Beat eggs in small bowl with fork or wire whisk until yolks and whites are well mixed.
2. Heat butter in 8-inch skillet over medium-high heat until butter is hot and sizzling. As butter melts, tilt skillet to coat bottom with butter.
3. Quickly pour eggs into skillet. While rapidly sliding skillet back and forth over heat, quickly stir eggs with a fork to spread them continuously over the bottom of the skillet as they thicken. When they are thickened, let stand over heat a few seconds to lightly brown bottom of omelet. Do not overcook—the omelet will continue to cook after being folded. Sprinkle with cheese.
4. Tilt skillet and run a spatula under edge of omelet, then jerk skillet sharply to loosen omelet from bottom of skillet. Fold portion of omelet nearest you just to center. Allow for a portion of the omelet to slide up side of skillet. Turn omelet onto warm plate, flipping folded portion of omelet over so far side is on bottom. Tuck sides of omelet under if desired. Sprinkle with salt and pepper.
