1. Bring a large pot of salted water to a boil. Set a large bowl of ice water to the side.
2. Core cauliflower and cut into medium florets. Cut off broccoli stems and cut into florets. Blanch cauliflower 3 minutes in boiling water. Remove from the water with a slotted spoon or small strainer and transfer immediately to the ice bath to stop it from cooking. Repeat with the broccoli, cooking for 3 minutes, and shocking in the ice bath. Drain the vegetables very well. Reserve bowl for mixing in step 4.
3. Prepare cheese sauce. Heat 2 tablespoons oil in a large saucepan over medium-high heat. Add leek and ¾ teaspoon salt and cook, stirring often until the leek is soft, 4 to 5 minutes. Sprinkle the flour over the leek and stir to coat. Add milk and bring to a simmer, over high heat, stirring constantly. Cook until bubbling and thickened, 1 to 2 minutes longer. Remove from heat and stir in cheese and pepper until the cheese is completely melted into the sauce.
4. Preheat oven to 350 degrees F. Coat a 2 ½ quart baking dish with cooking spray. Stir panko, the remaining 1 teaspoon oil, paprika and garlic powder in a small dish until evenly moist. Mix the vegetables and cheese sauce together in the reserved bowl. Transfer to the prepared baking dish.

1. In a large pot, heat the oil and butter over medium-low heat until the butter melts. Add the onion and cook until it is very brown and soft, about 8 minutes (this develops big flavor so be patient). Increase the heat to medium. Add the carrots, and cook for 3 minutes, stirring occasionally. Stir in the garlic, salt, pepper, and thyme. Sprinkle the flour over the vegetables and mix to combine.
2. Cook until the flour disappears, about 2 minutes. Slowly stir in the broth. Add the milk, broccoli and cauliflower. Bring to a simmer. Place a lid over the pot, leaving it partially uncovered, and let simmer until the broccoli and cauliflower are tender, about 15 minutes, stirring occasionally.
3. Stir in the Dijon. With an immersion blender puree the soup until it is thick and creamy but still has some texture to it. (Alternatively, you can ladle a few scoops into a blender and puree a few batches. Be careful not to fill your blender more than halfway, as hot liquids like to splatter). Stir in the cheese. Continue stirring until the cheese is melted and the soup is creamy, 2 to 3 minutes. Taste the soup and season with additional salt and pepper to taste. Ladle the chowder into bowls, and serve warm, sprinkled with additional cheddar as desired.

Cauliflower Broccoli Pesto Skillet A Healthy Makeover

4 hours ago For this recipe, it’s best to use raw broccoli and cauliflower – it just makes for a less soggy dish. Step 1: Chop the cauliflower and broccoli up really small, or use your food processor for a quick spin – not too much, just to get it all uniformly chopped. Step 2: Saute your mushrooms then saute your onions. Step 3: Add the cauliflower

1. Rice the cauliflower and broccoli by either chopping finely OR the easiest method I have found is to place the florets into a blender to about the halfway mark, then add water to about the 1/4 mark. Place lid on the blender and give it a quick blend...drain water, remove riced veggies and then repeat until all is riced
2. In a large pan or skillet, over medium high heat, add 1 T olive oil and sauté the mushrooms until browned (about 15 minutes); remove from pan to separate plate
3. Heat the remaining 2 T olive oil on medium heat, cook the onions until just about translucent (approx 5 mins)
4. Add the riced cauliflower and broccoli and saute for another 3-4 minutes

4. Form little nuggets with your hands and place them in a baking sheet (on top of parchment paper) or use a mold pan for nuggets. Silicone molds won’t stick.

1. Preheat your oven to 400 °F with the convection setting on (or 450 °F for traditional ovens).
2. Broccoli: Cut the step off of your broccoli and separate the florets. Cut about 1 inch off the bottom of the stem and then peel the tough skin. Cut the rest of the stem into even sized pieces. Submerge the broccoli in water for 3 minutes to remove excess dirt. Dry the broccoli in a salad spinner or with a towel.
3. Cauliflower: Cut your cauliflower in half and remove the stem from both sides. Separate the florets. If the florets are larger than 2-3 inches thick, I like to cut them in half so they roast at the same time as the other florets. Submerge cauliflower in water for 3 minutes to remove excess dirt and then dry with a salad spinner or a towel.
4. Transfer the cauliflower and broccoli onto the sheet pan. Pour the olive oil and mix both veggies with the tongs (or clean hands). Make sure all surfaces of the veggies are covered.

1. Cut the onion into thin slices. Slice the garlic cloves. Melt the butter in a skillet on low heat, add onion slices and garlic and sauté on low until the onions are golden and caramelized (about 20 minutes).
2. Bring a large pot of salted water to a boil. Cut half of the cauliflower (1 pound) into florets and cook in broth until tender (5-7 minutes). Use the stem parts of the cauliflower heads for the sauce and leave most of the florets whole for the casserole.
3. To make the creamy white sauce, place tender cauliflower into a blender or food processor together with the caramelized onions, garlic, 1/2 cup of broth, milk and salt. Puree until smooth and set sauce aside.
4. Preheat the oven to 400 degrees F. Divide the remaining 1 pound cauliflower and broccoli into florets. Bring the large pot of salted water to a boil again and cook the cauliflower florets for 5 minutes. Add the broccoli florets and cook another 3 minutes. Drain, then place cauliflower and broccoli in a large casserole dish (at least 9x13-inches) together with the diced ham.
