1. Gently warm milk, water, butter and sugar on the stove until they're 90 to 100 degrees. Be careful not to over heat the pot, and if you do, make sure it cools to a comfortable skin temperature before proceeding.
2. Add the yeast to the warm milk mixture, ensuring it's no more than 100 degrees or you'll kill the yeast. Allow the yeast to dissolve for 5-10 minutes.
3. Stir in the salt and then begin adding the flour a few cups at a time. Once you've added about 4 cups remove the spoon and begin to knead the remaining flour into the dough.
4. Knead the dough until it comes together, about 3-5 minutes. Allow the dough to rest for 5 to 10 minutes before kneading again until the bread dough forms a smooth dough, about 5-8 minutes.

1. Directions:
2. Pour the warm water into your mixing bowl (I use my kitchen-aid mixer with the dough hook), add yeast, and sugar (or honey, for a healthier option). Stir it and leave it sit for about 5 minutes, or until it’s bubbly.
3. Meanwhile, melt your butter, add milk, and bring to lukewarm temperature. Add milk mixture to yeast mixture and stir it.
4. Add 3 - 4 cups flour, and the salt. Mix on low, then increase to speed 2, and mix for about a minute. Continue adding flour, 1/2 cup at a time, mixing until dough starts to pull away from the sides of bowl. Knead for another 2 minutes, or until dough is smooth and elastic. (If it’s still sticking to the sides, you need more flour.)

1. In the bowl of an electric mixer, mix together the sugar and warm water. Sprinkle the yeast over top, and let it set for 10-15 minutes, or until foamy and bubbly.
2. Stir in the salt, vegetable oil, and half of the flour. Add the remaining flour and use the dough hook to mix the dough together on medium high speed for several minutes. The dough will be pretty sticky.
3. Generously flour a clean surface and your hands. Turn the dough out onto the flour and knead it for 2-3 minutes. Place the dough in a clean, oiled bowl and cover it with saran wrap. Place in a warm place to rise for 1 hour, or until doubled in size. Grease two 9 inch bread pans.
4. Punch the dough down with your fist, re-flour your surface and turn the dough out again. Divide the dough into two even sections (weigh it if you want to be really precise). Press each section into a rectangle, about 9 x 13 inches in size. Roll the dough, starting on the short side. Fold the ends down and pinch the seams together. Place each section of dough in the greased pans. Cover with saran wrap and let rise until doubled again, about 45 minutes.

1. Dissolve the yeast in the 1/2 cup warm water and set aside. In a pan on top of the stove heat the other 2 cups water, sugar, salt and shortening just until warm and sugar is dissolved and shortening is melted. Do not boil.
2. In a large mixing bowl add 4 cups flour and pour in the water with the salt and shortening. Mix with a spoon. Then add the dissolved yeast and water to the flour. Add the other 3 cups flour a little at a time mixing with a spoon until the dough comes together and you can make it into a ball. Spread some flour on a cutting board or counter top and knead the dough several times.
3. Grease a large bowl or crock (I use olive oil but you can use whatever oil you have). Put the dough in the crock and turn over once so both sides are greased. Put in a warm spot and let rise for 3 hours. (I put in my oven and turn the oven light on) Remove and punch the dough down with your fist. cut the dough in half. Grease 2 (9 x 5) bread pans and spread the dough in the pans. Let rise another 1 1/2 hours. Bake in preheated 350 degree oven for 30 minutes. Makes 2 loaves.

1. In a large bowl, combine the warm water, the sugar and the yeast. Stir and let stand for about 10 minutes–this is “proofing” the yeast. If you get a bubbly foam on the top of the water, your yeast is active and you may proceed.
2. Add the salt and vegetable oil. Stir to combine.
3. Add the flour, one cup at a time until a soft dough forms. You may have to use more flour depending on weather conditions. For instance, today I needed close to 3 3/4 cups of all-purpose to get this right. The dough should be soft but NOT sticky.
4. Turn dough out on a floured surface and knead for about 5 minutes. If using a stand mixer with a dough hook, knead for about 3 minutes.
