1. Preheat oven to 375 degrees F.
2. In a large skillet over medium heat, melt 2 tablespoons of the butter; add the onions and season with salt and pepper, to taste. Cook, stirring often, until light golden, about 6 to 8 minutes and remove from the pan to a small plate. Raise the heat to medium-high and add the water, scraping up the brown bits from the bottom of the skillet and allowing the water to simmer just a couple of minutes to infuse in the onion flavor. Remove from the heat.
3. Put the cornbread in a large mixing bowl. Melt the remaining 6 tablespoons butter in a small pan over medium heat and let it bubble until the milk solids to start to turn golden. Add the sage leaves and briefly fry until beginning to crisp, about 30 seconds. With a slotted spoon, remove sage and put on top of cornbread to drain and crisp. Remove the butter from the heat. Add the eggs and cooked onions to the cornbread and pour the browned butter over the mixture. Season with salt and pepper, to taste. Add the onion infused water, a tablespoon at a time, gently folding, until cornbread is evenly moistened but not soggy. Pour the dressing into a 9 by 11-inch baking dish and bake in the preheated oven until the top is golden brown in color and the dressing is set in the middle, about 30 minutes.

1. Whenever possible, cut your cornbread into cubes and spread it out on some rimmed baking sheets and allow to sit overnight on your kitchen counter. I can't do that because my husband and son (and whoever else is around) grab little bits at a time every time they walk by. For myself the better option is to bake cubed cornbread at 400 degrees for 15 minutes or until crisp. Exact timing will depend on how big your cubes are so keep an eye on it. Once corners and edges start to brown it's time to come out of the oven.
2. Your other option is to spread in even layer on 2 baking sheets, and dry cornbread in 250-degree oven for somewhere between 50 and 60 minutes. Decide which method will work best for you and go for it!
3. Get out and measure all of your ingredients.
4. Place dry cornbread in your largest bowl. Whisk together broth or stock, half and half and eggs in medium bowl. Pour over top of cornbread and toss carefully until coated and cornbread doesn't crumble into smaller pieces. Set aside.

1. The first step in this recipe is drying the bread. You can place the bread cubes on a baking sheet and sit out to dry for a day, or you can lightly toast in the oven. Simply preheat the oven to 300°F. Bake for 20 minutes or until lightly toasted, tossing half way.
2. In a large pan, cook the sausage over medium-heat, breaking it up with a wooden spoon. Place the sausage on a plate lined with a paper towel to absorb the grease. Remove the grease from the pan.
3. Add butter to the same pan and allow to melt. Add the onion, celery and carrots and cook for 3-5 minutes or until soft. Stir in the sage and salt and pepper to taste. Remove from heat.
4. Combine the toasted bread, sausage, cooked veggies and fresh parsley in a large bowl. Slowly stir in 1 1/2 cups chicken broth and stir until combined. Add more as needed. You want all the bread to be lightly covered but not drenched. There shouldn't be extra liquid in the bowl. Add salt and pepper to taste.
