1. First, spread the flour out on a clean surface. Make a well in the middle (so it looks like the mouth of a volcano), and add the eggs, salt and olive oil to the well. With a fork or small whisk, begin to break up the eggs, while slowly starting to add more and more flour from the walls of the well.
2. Continue to add more and more flour until there is no more left to add, then begin to knead the dough with your hands. It will start out very dry and flakey, but continue to knead the dough for at least 8 minutes and it will slowly start to stick together more. Form the dough into a ball, then cut it into 4-6 equal sized pieces (small enough to fit into your pasta attachment).
3. Attach the spaghetti attachment to the pasta presser, and securely attach the pasta presser to the KitchenAid stand mixer. Start the mixer on low, and begin to carefully feed the dough into the hole at the top. When the spaghetti noodles begin to come out of the pasta presser, allow them to get to the desired length before slicing them off (most pasta attachments have a built in slicer).
4. Once sliced, hang them on your pasta hanger (or coat hanger) and continue to feed the dough through the pasta press until you are all done.

1. Rule of thumb: Two eggs per one cup of flourMake a well in the center of your pile of flour and crack in your eggs.
2. Slowly mix together with your hands. Turn it out onto a floured surface and knead (roll, punch, push, etc.) by hand until dough becomes smooth and pliable, adding flour to the board as necessary.Let the dough rest for a little while before rolling it out.
3. You can sort of figure on one egg per person to determine how much dough to make.
4. Example: Two eggs and one cup of flour would make enough pasta dough for a dinner for two. When you’re ready, roll it out on a floured surface as thinly as it’ll go.

While on #1, fold the dough in half and run it through again. I do this several times.
4. Adding a little bit of flour on each side of the dough again, change setting to #2 and pass the pasta dough through the sheet roller. I do this twice and then twice each on #3 and then #4. If you want thicker dough, don't do the #4 setting.

1. Place the flour on a clean work surface and make a nest. Add the eggs, olive oil, and salt to the center and use a fork to gently break up the eggs, keeping the flour walls intact as best as you can. Use your hands to gently bring the flour inward to incorporate. Continue working the dough with your hands to bring it together into a shaggy ball.
2. Knead the dough for 8 to 10 minutes. At the beginning, the dough should feel pretty dry, but stick with it! It might not feel like it’s going to come together, but after 8-10 minutes of kneading, it should become cohesive and smooth. If the dough still seems too dry, sprinkle your fingers with a tiny bit of water to incorporate. If it’s too sticky, dust more flour onto your work surface. Shape the dough into a ball, wrap in plastic wrap, and let rest at room temperature for 30 minutes.
3. Dust 2 large baking sheets with flour and set aside.
4. Slice the dough into four pieces. Gently flatten one into an oval disk. Run the dough through the Pasta Roller Attachment three times on level 1 (the widest setting).

Chef Anne's AllPurpose Pasta Dough Recipe Anne Burrell

8 hours ago Deselect All. 1 pound all-purpose flour. 4 whole eggs, plus 1 yolk. 1/4 cup extra-virgin olive oil. Kosher salt. 1 to 2 tablespoons water or more if needed

Rating: 5/5(103)
Steps: 6
Difficulty: Intermediate
Total Time: 1 hr 45 mins
1. Put the flour on a clean dry work surface. Make a hole (this is also called a well) in the center of the flour pile that is about 8 inches wide (bigger is definitely better here). Crack all of the eggs and the yolk into the hole and add the olive oil, salt and water.
2. Using a fork beat the eggs together with the olive oil, water and salt. Using the fork, begin to incorporate the flour into the egg mixture; be careful not to break the sides of the well or the egg mixture will run all over your board and you will have a big mess! Also, dont worry about the lumps. When enough flour has been incorporated into the egg mixture that it will not run all over the place when the sides of the well are broken, begin to use your hands to really get everything well combined. If the mixture is tight and dry, wet your hands and begin kneading with wet hands. When the mixture has really come together to a homogeneous mixture, THEN you can start kneading.
3. When kneading it is VERY important to put your body weight into it, get on top of the dough to really stretch it and not to tear the dough. Using the heels of your palms, roll the dough to create a very smooooooth, supple dough. When done the dough should look VERY smooth and feel almost velvety. Kneading will usually take from 8 to 10 minutes for an experienced kneader and 10 to 15 for an inexperienced kneader. Put your body weight into it, you need to knead! This is where the perfect, toothsome texture of your pasta is formed. Get in there and have fun!
4. When the pasta has been kneaded to the perfect consistency, wrap it in plastic and let rest for at least 1 hour. If using immediately do not refrigerate.

1. Put the flour in a food processor with ¾ of your egg mixture and a pinch of salt. Blitz to large crumbs – they should come together to form a dough when squeezed (if it feels a little dry gradually add a bit more egg). Tip the dough onto a lightly floured surface, knead for 1 min or until nice and smooth – don’t worry if it’s quite firm as it will soften when it rests. Cover with cling film and leave to rest for 30 mins.
2. Cut away ¼ of the dough (keep the rest covered with cling film) and feed it through the widest setting on your pasta machine. (If you don’t have a machine, use a heavy rolling pin to roll the dough as thinly as possible.) Then fold into three, give the dough a quarter turn and feed through the pasta machine again. Repeat this process once more then continue to pass the dough through the machine, progressively narrowing the rollers, one notch at a time, until you have a smooth sheet of pasta. On the narrowest setting, feed the sheet through twice.
3. Cut as required to use for filled pastas like tortellini, or cut into lengths to make spaghetti, linguine, tagliatelle, or pappardelle. Then, dust in semolina flour and set aside, or hang until dry (an hour will be enough time.) Store in a sealed container in the fridge and use within a couple of days, or freeze for 1 month.
