3. Manually let the pressure out, covering steam with a kitchen towel. (Or feel free to let the pressure release naturally.)
4. Shred chicken thighs with two forks (either right in the pot, or on a cutting board). The soup will thicken. (At this point you could add corn, and return to saute setting for a few minutes.) Squeeze with a generous amount of lime juice and taste for salt, adding more if necessary- especially if you used dry beans, you will need to add more. You want a good balance between lime and salt. ( If the soup tastes bland, it probably needs more of each.)

1. Pressure cook the broth: Cut the chicken breast meat off of the rotisserie chicken and set aside for later. Add the rotisserie chicken carcass, onion, carrot, celery, bay leaves, and salt to the pressure cooker pot, then add the 8 cups of water. (It should just cover the rotisserie chicken – it’s OK if the knobs of the drumsticks are poking up.) Lock the lid and pressure cook on high pressure for 60 minutes with a natural pressure release in an Instant Pot or other electric PC (Manual or Pressure Cook mode in an Instant Pot) or 50 minutes in a stovetop PC. The natural pressure release will take 30 to 40 minutes minutes. (It takes a long time for all that water to cool off. If you’re in a hurry, let the pressure come down for at least 20 minutes, then quick release any remaining pressure.) Scoop the chicken carcass and vegetables out of the pot with a slotted spoon and discard; they’ve given their all to the broth. Strain the broth through a fine mesh strainer, and set aside for later.
2. Sauté the aromatics: Wipe out the pressure cooker pot liner, then put it back in the pressure cooker base. Set the pot to sauté mode (medium heat for a stovetop PC), add the tablespoon of oil, and heat until the oil is shimmering, about 3 minutes. Add the diced onions and crushed garlic to the pot and sauté until the onion softens, about 5 minutes. Add the crushed tomatoes and cook, stirring and scraping the bottom of the pot with a wooden spoon, until the tomatoes thicken up, about 5 minutes.
3. Pressure cook the soup: Stir in the chicken broth and a teaspoon of salt. Scrape the bottom of the pot carefully to make sure no tomatoes are sticking. Lock the lid and cook at high pressure for 5 minutes with a quick pressure release. (Use “manual” or “pressure cook” mode in an Instant Pot.) After quick-releasing the pressure, open the lid away from you – again, be careful, the steam is scalding.
4. Build the soup bowls and serve: In the bottom of each bowl, put some shredded chicken, a few cubes of cheese, a few cubes of avocado, and a few jalapeño pepper slices. Ladle the broth into the bowl, sprinkle cilantro and tortilla strips on top, and serve, passing the lime wedges at the table.

1. Place chicken breast on the bottom of the instant pot. Now add chicken broth, enchilada sauce, ONE CAN fire-roasted diced tomatoes, onion, green chile, ONE CAN black beans, garlic, and jalapeno. DO NOT EXCEED THE PC MAX LINE. You should have one can of tomatoes and one can of black beans we will add later.
2. Replace lid on the instant pot and set the valve to sealing. Set the Instant Pot to pressure cook for 20 minutes. It will take 15-20 minutes too come to pressure because the instant pot is so full, then it will cook for 20 minutes.
3. Preheat oven to 400F and line a baking sheet with parchment paper. Spray the paper with cooking spray. Cut the corn tortillas into 1/4 inch strips and spread out evenly over the baking sheet, then spray with cooking spray. Bake for 10 minutes, shake to mix up and bake an additional 5 minutes. Check on the tortilla strips often, depending on climate, oven, etc they may cook faster or slower and you don't want to burn them! Bake until your desired crispy level is achieved!
4. Once the 20 minutes are up, the instant pot will switch to warm. If I used frozen chicken breasts I like to let it naturally release for 15-20 minutes (aka don't touch anything) just to make sure my chicken is nice and tender before switching the valve to venting to quick release. If using fresh chicken, go ahead and switch that valve to venting to quick release. Make sure to follow best practices as outlined in your IP manual, steer clear of the steam etc.
