1. 1. Preheat oven to 350°F. In a large saucepan, add the potatoes and 1 tablespoon salt, cover with cold water and bring to a boil, partially covered for 10 minutes. Drain well, cool slightly, and cut into 3/4-inch slices. Set aside with the skin on.
2. 2. Heat 1 tablespoon olive oil in a large 12-inch skillet over medium heat. Cook the sausage on both sides, until browned, about 8 minutes total. Remove sausage from pan, cut into 3/4-inch slices and set aside. Sausage does not need to be cooked through, just browned on the outside.
3. 3. Pat chicken dry, salt and pepper both sides and dust in flour. Add 2 tablespoons olive oil to the pan, sauté chicken until browned, 5-7 minutes per side, about 14 minutes total. Remove chicken from pan and set aside.
4. 4. Add 2 tablespoons olive oil to the pan. Add the garlic, bay leaf, rosemary, chicken and sausage and sauté for about 5 minutes. Add the wine to deglaze the pan, scraping the brown bits off the bottom for another 5 minutes. Add the potatoes, white wine vinegar, chicken broth and lemon juice. 1. Arrange racks in upper and lower thirds of oven; preheat to 450°. Toss potatoes with 3 Tbsp. oil on a rimmed baking sheet; season with salt and pepper. Arrange cut side down and roast on lower rack until tender and cut sides are browned, 20–30 minutes; set aside.
2. Meanwhile, heat remaining 3 Tbsp. oil in a large skillet over medium-high. Cook sausages, turning occasionally, until browned on all sides, 6–8 minutes (they will not be fully cooked). Transfer to a plate.
3. Season chicken on both sides with salt and pepper. Cook in same skillet, turning occasionally, until golden brown on both sides, 8–10 minutes (they will also be undercooked). Transfer to plate with sausage.
4. Cook onions, bell pepper, and garlic in same skillet over medium-high heat, stirring occasionally and scraping bottom of pan, until tender and beginning to brown, 10–12 minutes. Add wine and cook, stirring occasionally, until reduced and you can no longer smell the alcohol, about 8 minutes. Add broth, peppers, vinegar, and rosemary and bring to a boil; cook until slightly reduced, about 5 minutes. Nestle chicken into onion mixture, then transfer skillet to upper rack of oven and roast chicken 10 minutes. Add sausages to skillet, pushing them into onion mixture, and continue to roast until chicken is cooked through and an instant-read thermometer inserted into thickest part of thigh registers 165°, 5–10 minutes.

1. In a large skillet with a tight fitting lid, fill half full of water.
2. Peel potatoes (if using small new red potatoes, no need to peel) and cut into wedges about the same size as a steak fry. Place in water as you cut. Place pan on stove, and bring to a boil, then cover and lower to a medium boil and boil for five minutes. Potato wedges should still have a good bite. They will be cooked again later. With a strainer, remove to a plate. Discard water.
3. Wipe out the pan and add the olive oil. Heat over medium high and add the sausage pieces. Brown on both sides, then reduce heat and continue to cook and turn until they are cooked through. Remove to a medium bowl.
4. Add onions and peppers and sauté for about 8-10 minutes or until the peppers just start to lose their crunch. Add the stock and stir to loosen up any brown bits from the pan. Pour this mixture in the bowl with the sausages.

2. Add the oil and chicken sausage to a large, deep oven-safe skillet or dutch oven, and cook over medium until golden brown on both sides. Use a slotted spoon to remove the sausage and set it aside.
3. Add the potatoes and salt to that same skillet and sauté over medium until they can just be pierced with a fork, approximately 8-10 minutes. You don't want them to be too soft or else they'll fall apart in the oven. You may need to add more oil so they don't stick to the skillet. Then, use a slotted spoon to remove the potatoes and place them into the bowl with the chicken sausage.
4. Place onion and garlic into the skillet and sauté for 2-3 minutes or until the onion is soft. Then, pour the milk into the skillet and sprinkle the cornstarch overtop. Whisk continuously until the cornstarch has dissolved, then bring the milk to a low simmer. Once the milk starts simmering, sprinkle the cheese in a little at a time, whisking until it melts. Do this until all the cheese is gone.

1. Heat oven to 425 degrees while you cut your potatoes, shallots, and sausages. On a large baking sheet (I like to cover mine with parchment paper), toss together the potatoes and shallots with the olive oil. Make sure your potatoes are all laying flat on the sheet and not stacked on top of each other. Sprinkle with salt and pepper.
2. Bake potatoes and shallots for 20 minutes. Remove the sheet from the oven and toss the potatoes and shallots. Then add the cut sausages to the baking sheet. Cook another 20-25 minutes at 425.
3. In a large bowl toss the arugula with the vinegar and some salt and pepper to taste. Add the roasted chicken sausage, shallots, and potatoes.
4. If using chicken breasts, cut the breasts in half so they're in smaller pieces. Sprinkle with salt and pepper, 1 clove of minced garlic, 1 tbsp of olive oil, 1 tsp of thyme, and 1 tsp of oregano. You can combine all of this in a bowl for easy mixing, if you'd like. Cook the same, giving the chicken about 15-20 minutes at 425. Chicken should reach 165 internal temperature.
