Depending on your heat tolerance, you can incorporate a lot of jalapeno peppers into a sauce. One of my favorites is a roasted jalapeno-tomato sauce that I serve in a number of recipes, such as pastas, over chicken and fish, or over goat cheese as an appetizer.
