METHOD: Clean, skin,and cut chicken in small pieces,then wash with lime or lemon juice. Drain, season with curry, onion, thyme, garlic, all spice (pimento), black peppers, salt and let marinate for awhile. Place all of the whole seeds in a skillet and toast them up for about 2-3 minutes on medium heat until aromatic. Do not go longer than 4 minutes to prevent seeds from burning. Allow the seeds to cool for about 10 minutes before adding them into coffee/spice grinder. Then add seeds and powders into the grinder.
