2. Add the flour, baking powder and milk to the yolks and mix to a smooth thick batter.
3. Whisk the whites with 1 pinch of sea salt until they form stiff peaks, then fold into the batter – it is now ready to use.Heat a non-stick pan over a medium heat, pour some of the batter into the pan and cook for a couple of minutes, or until it starts to look golden and firm.
4. At this point sprinkle your chosen flavouring (see below) onto the uncooked side before loosening with a spatula and flipping the pancake over.

2. Heat a large non-stick frying pan over medium heat for about a minute. Add a ladle full of batter into the center of the pan, it should spread out on it's own, if not tilt the pan a bit to encourage it.
3. Cook for about 1 to 2 minutes, or until bubbles appear on the surface and the base is golden, flip and cook for about 30 more seconds or until golden on the bottom. Continue until all the batter is used.
4. Serve right away or allow to cool and freeze for a yummy made-ahead breakfast.
