1. Season inside of turkey cavity generously with about 1 tsp salt and 1/4 tsp pepper.
2. Here is a fantastic tip: to protect the turkey breast and keep it juicy: Fold a large square sheet of foil into a triangle. Rub one side of your triangle with olive oil and shape the foil (oil-side-down) over the turkey breast, then remove foil; it will shield your turkey breast and keep it from getting dry. You'll apply this shield later in the roasting process.

1. Preheat the oven to 325F* (See Notes). Place the thawed turkey into a large baking dish (disposable or otherwise) with deep sides. Tip - If you are going the disposable pan route, I recommend placing a layer of vegetables such as thinly-sliced carrots and potatoes underneath the turkey to prevent burning on the bottom since disposable pans are so much thinner than an actual roasting pan.
2. Remove the giblets and neck (both found inside the cavity) and discard (you could keep the giblets for gravy-making but I don't and in my gravy recipe aren't necessary).
3. Tuck the wings underneath the turkey to help stabilize it, cut off any excess skin that is loose and just hanging, and pat dry with paper towels; set aside.
4. Place the softened butter into a medium-sized bowl. Add the salt, pepper, parsley, thyme, rosemary, oregano, sage, and mix with a wooden spoon until combined.

How to Cook the Juiciest, Most Tender Oven Roast Turkey

1. NOTE : This method cooks your turkey a LOT FASTER than usual! The USDA doesn't recommend cooking under 325 ° F However, this method steams the turkey and it will get crazy hot inside the bag. If you want an all day turkey, turn the heat down. IF it's cooking too fast, turn the heat down, the residual steam will keep it cooking. The choice is up to you!
2. Pre-heat your oven to 300 °F.
3. Pat the tops and sides of the turkey dry with paper towels and throw them out.
4. Place your turkey so that it’s completely in the oven bag BUT so that the opening is slanted more towards the top instead of straight across . Take your chosen onions quarters, celery, apple etc and place them into the turkey cavity.

1. Remove the turkey from it’s packaging, rinse, pat dry with paper towels, and set in a rimmed baking dish (like a 9×13-inch pan — you don’t need a roasting pan for this).
2. In a small bowl, combine the butter, garlic, and salt. Mix to combine well.
3. Using your hands, carefully separate the turkey skin from the meat when the breast meat is facing up in the pan. Getting started is a little hard, but just be careful to not rip through the skin. Work around the skin and meat to loosen the skin that is connected to the breast meat.
4. When the skin is separated (but not removed — it’ll still be attached on the edges), use your hands to spread half of the butter mixture and the garlic all over the turkey breast meat, under the skin.

6 hours ago Roast the turkey for 45 minutes. Lightly tent the top of the turkey with a piece of aluminum foil and cook for 15 more minutes. Reduce the oven temperature to 325°F and roast for 1 1/2 to 2 hours. Check the temperature of the turkey

1. Brine the turkey with the wet or dry brine method. NOTE: To avoid spreading bacteria, do not rinse the raw, pre-brined turkey with water. For a wet brine, brine the turkey for 12-24 hours then remove the turkey from the brine and drain the turkey well. Place the turkey on the rack in a roasting pan, pat dry, and truss the legs of the turkey and tuck the wings under the bird. Place the turkey in the roasting pan uncovered in the refrigerator for 12-24 hours to air dry and the skin to dry out. For a dry brine, salt the bird with the brine mixture and refrigerate uncovered for 24-28 hours. Do not rinse the brine from the bird. Brush off any large salt particles not absorbed into the skin.
2. Bring the turkey to room temperature for 1 hour before cooking. Adjust the oven rack to the lowest part of the oven and preheat to 425°F. Stuff the cavity of the turkey with a few of the vegetables and herbs then scatter the rest under the rack on the bottom of the roasting pan. Use your fingers to gently pry the skin from the breast meat. Use the handle of a spoon or fork to work your way between the skin and meat if your fingers won't reach, being careful not to puncture or tear the skin. Rub 2 tablespoons of the softened butter and under the skin, flattening it to evenly cover the breast meat.
3. Melt the remaining 4 tablespoons of the butter in a small saucepan. Stir in 1/2 cup of the white wine. Let the butter and wine mixture cool slightly so it becomes a bit clumpy. Use a basting brush to brush the butter mixture over the skin of the breast, legs, thighs and wings. Add any extra to the roasting pan. Sprinkle the top of the turkey with freshly ground black pepper. Add the rest of the wine and 1-2 cups of water to the roasting pan.
4. Roast the turkey for 45 minutes. Lightly tent the top of the turkey with a piece of aluminum foil and cook for 15 more minutes. Reduce the oven temperature to 325°F and roast for 1 1/2 to 2 hours. Check the temperature of the turkey midway through roasting and add more water if necessary. Roast until the breast registers 160-175°F and up to 180°F for the thickest part of the thigh away from the bone, and the juices run clear when the thermometer is removed.

1. In a medium bowl, mix all ingredients together until well combined. Use as much or as little of the un-measured seasonings as you’d like, roughly between a half to full teaspoon of each. Just try to use your best judgement. Remember ground turkey is slightly more bland than beef, so you can kinda get away with adding so many different flavors here. You don’t have to use ALL of the seasonings I used, but definitely use what you have. These are merely suggestions.
2. Cover and refrigerate for at least an hour. I let mine marinate for about 4 hours.
3. When ready to cook, heat about 1 tbsp olive oil in a skillet over medium heat.
4. Form your patties about 1 1/2 inches thick. They will be tender to form, so be gentle. Lightly pinch the middle of the patty together to make an indentation. This prevents the middle from rising as much and giving you a rounded burger instead of a flatter one. Cook for about 5 to 7 minutes on each side, or until juices are clear of any pink.

2. Remove the neck and giblets from the thawed turkey and discard or set aside for later use. Remove any plastic or wire holding the turkey legs together and discard. Cover the bucket a lid or a thick, tight layer of aluminum foil and set aside to brine overnight or up to 24 hours.

1. If your turkey is frozen, be sure to defrost it completely before beginning. The day before I'm going to roast the turkey, I take the turkey out of the freezer (about 24 hours in advance) and defrost it in a sink of cold water all day, changing the water as necessary (to keep it cool). Then, I place the turkey in a large bowl (to catch any drips) in the fridge overnight.
2. Preheat your oven to 325 degrees Fahrenheit when your turkey is defrosted.
3. Remove the neck, the giblets or any bag that is inside the turkey and rinse it well with cold water. Pat it dry with paper towel on the outside.
4. Place the turkey in a roasting pan on a rack. If you don't have a rack for your roasting pan, simply place a few halved onions, carrots and celery stalks under the turkey to raise it off the bottom of the pan (discard these vegetables after roasting).
