3. Stir in the flour to coat and make a roux (paste). Slowly whisk in the milk, beer, and 1/4 teaspoon salt. Bring to a boil.
4. Once boiling, turn the heat down to a simmer. Cook until thickened, about 3-5 minutes. Remove from the heat and stir in the cheese until melted. Taste and adjust for salt if necessary.
