1. Boil the water.
2. Measure the dry ingredients in a medium bowl and whisk together with a whisk.
3. Mix the egg and oil together then blend into the dry ingredients with a hand mixer. Pour the hot water into the tortilla ingredients and continue to mix with the hand mixer, until the ingredients become a light fluffy dough. The dough will be firm, soft and stick to your fingers a bit when manipulated. Cover the dough, leaving a space for the steam to escape, and let cool completely. I put mine in the refrigerator for a few hours.
4. When ready to cook the tortillas, heat a skillet over medium heat. I used a big pancake griddle and cooked 3 at a time. Divide the dough into 12 sections. I weighed mine to make sure they were the same. Mine weighed about 1 1/2 ounces each. Roll the dough into balls. Roll the dough into tortillas between two sheets of oiled parchment paper. (I use a tortilla press and it was worth every penny. I also use it to make chips and crackers. Buy one, you need one. It makes things MUCH easier.) Peel the parchment off of the tortilla and cook on both sides until it changes to a lighter yellow color (resembling a corn tortilla) and browns around the edges.

Frequently Asked Questions

How much konjac flour do I add to flour?

Try adding half a teaspoon of konjac flour for every cup of flour for a more tender product (plus a fiber boost!), but don’t add more than one teaspoon per recipe. (Otherwise you might affect the final taste and texture.)

What are konjac flour noodles?

Konjac flour noodles come in several varieties and are shaped from from the root of the konnyaku imo plant, which is a wild-yam like plant native to Asia. The root of the plant contains a lot of water and fiber.

What is konjac and how is it made?

The root is milled or mashed into a powder (aka konjac flour), then boiled in water with lime (or another source of calcium hydroxide), which then turns the mixture into a gel. This gel is then used for a variety of different dishes, from being pressed into shirataki noodles, formed into cakes, or even acting as a plant-based version of gelatin.

How do you make konjac slurry?

The flour must first be combined with a cold liquid to make a konjac slurry that can be more gradually incorporated into a hot liquid so it thickens evenly without forming large clumps. This is because, while the flour will dissolve in any liquid, it will only start to really thicken when heat is applied.
