1. Preheat the oven to 400 degrees F.
2. Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 by 12-inch baking dish.
3. Pat the chicken breasts dry and place them skin side up over the sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces of chicken.
4. Bake for 30 to 40 minutes, depending on the size of the chicken breasts, until the chicken is done and the skin is lightly browned. If the chicken isn't browned enough, put it under the broiler for 2 minutes. Cover the pan tightly with aluminum foil and allow to rest for 10 minutes. Sprinkle with salt and serve hot with the pan juices.

2. Arrange lemon slices, grated garlic, remaining 12 garlic cloves, and half of thyme sprigs in a single layer in a 13- x 9-inch baking dish; toss briefly to disperse the grated garlic. 1. Set the oven at 400°F/204°C. In the interest of being quick and easy let's slice the breasts in half top to bottom. Like if you were going to butterfly them but go all the way through. Lay them out in a foil lined bake pan. Then add all of the other ingredients and turn the chicken filets over a few times to get them well coated and all of the ingredients mixed together.
2. Put it in the oven and after 15 minutes check 'em. If they are firm to a finger poke and/or the juices are running clear they are good. Switch the oven from bake to broil for 2-3 minutes.
3. Then serve up your Oven Baked Lemon Chicken. Spoon some of the liquid from the pan on to the chicken. While the chicken is in the oven you could throw together a salad and put a couple of potatoes in the microwave for the carb. And, you could tear a piece of dough from the bread dough stash in the fridge and put it in the oven or the toaster oven for some homemade bread to dip in the sauce. We had a real nice well chilled California Chardonnay with ours.
