1. Using a potato peeler, remove the rinds from the lemons, leaving all or as much of the pith on the lemon as possible (the white part). Too much pith and limoncello will be bitter.
2. Place the lemon peels in a covered glass container with the Everclear and let sit for 7 days.
3. On the 8th day, strain the lemon peels from the Everclear and discard.
4. To make the simple syrup (sugar and water), add the water and sugar to a medium saucepan on medium heat. Stir until sugar is completely dissolved. Let cool to room temp and add to the Everclear. You can serve immediately or place in the freezer to chill.

2. Combine water and sugar in a saucepan over medium heat; stir until sugar is fully dissolved. Set simple syrup aside to cool completely, 15 to 30 minutes.
3. While simple syrup is cooling, place a sieve over a large bowl and line with coffee filters. Strain alcohol mixture through coffee filters to remove all sediment. Replace the filters as needed until all the mixture has been filtered. Filter one more time to ensure all sediment has been removed. Discard coffee filters and zest.
4. Add enough simple syrup to the alcohol mixture to reach the desired alcohol-by-volume percentage; refer to an alcohol content calculator.

Excellent Recipe. Have tried Limoncello here and un the Amalfi coast and this is a good one. Ensure you substitute the vodka with Everclear. Also be careful when pealing the skin of the lemon not to include the white pith of the lemon. I used 151º proof Everclear and used the full recommended amount of simple syrup and it came out great.

Since we started with 1 litre vodka, 1515 – 1000 (millilitres) = 515 ml. So we need 515 ml simple syrup (water + sugar) The next part is a matter of taste. More sugar = sweeter limoncello. Every 100g of sugar (1/2 cup) will give you 50 ml of syrup. Just add water to that for your total simple syrup.

I just put the lemon peels in 1Liter of 190 proof Everclear…I can follow a recipe but the ratio of water and sugar will be different based on what the proof is….. what proof is your grain alcohol above….and what would it be for 190 …

We make limoncello as Christmas gifts and to use in our Limoncello bundt cake! That recipe uses a boxed Betty Crocker lemon cake mix, small box of lemon pudding, 5 eggs, & equal parts veg oil and limoncello mixed for about 5 min before pouring into the floured bundt pan. It is amazing. SO GOOD. Just don’t overbake – dry is no good.
