Magic Pan Creperie Recipes

We used to go to the San Francisco Magic Pan for lunch when we were downtown shopping around Union Square. My favorite was the spinach souffle crepe which apparently used Stouffer’s thawed Spinach Souffle for the filling. I found a collection of Magic Pan recipes and thought I’d share them.

THE MAGIC PAN PROJECT The Magic Pan Restaurant Recipes 9/15/2007. 4 of 8 Tabasco 2 tsp ⅔ tsp Tarragon wine vinegar 1 gal 5 ⅓ cup Egg, whole, fresh 3 each 1 each Salad oil 2 gal 10⅔ cup. Place spices in a Hobart mixer bowl. Using the wire whip, slowly add the vinegar until thoroughly blended.

Source: Magic Pan Recipes Makes 12 crepes 1 cup flour pinch of salt 3 eggs, room temperature 1 1/2 cups milk 1/2 cup oil or melted butter Sift flour and salt together into mixing bowl. Mix thoroughly with eggs to form a thick paste. Gradually add milk, whisk until smooth—DO NOT OVER BEAT. Batter will have the consistency of thick cream.

Wash and dry lettuce using wire salad basket or towel bag to shake water from leaves. Chill to crisp. When ready to use, break lettuce into bite-size pieces. Add minced parsley, sliced green onions and mandarin orange. Add just enough sweet and sour dressing to moisten ingredients.

There is another recipe for Magic Pan ham and cheese crepes, but it is not fried, it is baked in an oven. There are recipes for the "ham palicsintas" that are found on most Magic Pan menus online, but they do not have any cheese, they have sour cream. Apparently, only some Magic Pan locations had the fried ham & cheese crepes, but not all.

Preparation. Preheat oven to 375°F. Melt butter in medium saucepan. Add onion and cook, stirring 5 minutes until tender. The last Magic Pan restaurant (in McLean, Virginia) closed in 1995. With that closure came the loss of the proprietary recipes for the chain. (Magic Pan had never produced a recipe book, although Paulette Fono did write a book about their crepes in 1969.)
