After a bit of tinkering, I present to you Mexican Vinaigrette salad dressing — a truly refreshing counterpart to just about any Mexico-inspired meal. It also pairs well with left-over turkey and gravy for a ‘cut above’ lunch — just saying.

1. Prepare the dressing by mixing all the ingredients together except the oil until the honey dissolves. I almost always melt the honey a bit so that it dissolves well. Next, add the olive oil and shake well.
2. Prepare the salsa either by chopping all the ingredients by hand and combining them, or place them in a food processor and pulse a few times to chop and blend everything.
3. Place the romaine lettuce on a plate, top with the other salad ingredients, and then top with guacamole and other personal additions.
4. Mix the dressing into the salad and enjoy!

Mexican Salsa Vinaigrette is great for salads. I don't know why you can't buy ready made Mexican salsa dressing. I would think it would be very popular.
