3. Transfer the dough onto a well-floured work surface, and knead until you see the surface of the dough begin to break during folding and kneading. Roll dough into a ball, and place into a lightly floured large bowl. Cover the bowl with a kitchen towel, and set into a warm place to rise until doubled, about 1 hour.
4. Spray 2 9x5-inch loaf pans with cooking spray.

1. Dissolve the yeast in the 1/2 cup warm water and set aside. In a pan on top of the stove heat the other 2 cups water, sugar, salt and shortening just until warm and sugar is dissolved and shortening is melted. Do not boil.

3. Grease a large bowl or crock (I use olive oil but you can use whatever oil you have). Put the dough in the crock and turn over once so both sides are greased.
