1. Cut broccoli into florets and place in a large mixing bowl. Set aside. (Save the stems and juice them later!)
2. Prepare the cheezy sauce. In a blender add the rest of the ingredients: your choice of soy sauce (tamari, coconut aminos, or Brag Liquid Aminos), nutritional yeast flakes, garlic clove, onion powder, hemp seeds, and vegetable broth or water. Blend until smooth.
3. Pour cheezy sauce mixture all over the broccoli florets and mix until all pieces of broccoli are covered in the sauce.
4. If using dehydrator: Place broccoli on silicone dehydrator sheets (affiliate link) or you can use parchment paper. As a last resort you can always place them on the dehydrator mesh sheets but it will get messy because these will drip a little. Dehydrate at 115F degrees overnight (for about 10 to 12 hours). If you want these sooner and don’t mind raising the temp up (won’t be raw), you can dry them at 145F to 150F and they will be ready within 2 hours. Remove once the chips are dried and crunchy.

1. Chop both the florets and stalk of the broccoli into small even pieces, finely dice the red onion, slice the apple into thin matchsticks and roughly chop the walnuts. Combine in a large bowl.
2. To make the dressing, whisk together the olive oil, apple cider vinegar, dijon mustard, maple syrup, minced garlic and a generous sprinkle of sea salt and black pepper. Taste and adjust the seasoning.
3. Pour the dressing over the broccoli mixture and mix well to combine before transfering into a serving bowl to serve. This salad can be served straight-away, but it is far better after it has had time to chill and marinate in the fridge (I would recommend at least 20 minutes).

1. Drain the water from soaked cashews and process in a food processor until they reach the consistency of ricotta. Remove tough stalks from broccoli before chopping florets.
2. You may discard the stalks or use them in another dish later, just peel the hard exterior first and chop them for an addition to salads or anything else.
3. Add florets, avocado, garlic, and chives to processor. Process ingredients until smooth, adding water as needed, about 1/4 a cup at a time until you reach your desired consistency.
4. Add spices to your taste and garnish with parsley or chives and serve. Enjoy! Makes 2 servings.

1. Warm a small pan over a medium heat and add the slivered almonds. Keep them moving around the pan for a 2 to 3 minutes until they smell really nutty and toasty and are turning golden. Remove from the heat and allow to cool.
2. Cut the broccoli into bite sized florets. Cut the stalks into thin matchsticks too if you don't want to waste them. Wash thoroughly and shake dry or use a salad spinner. Put in a large salad bowl.
3. Wash the grapes, dry them well and cut them all in half.
4. In a small bowl mix up the dressing ingredients, adding the salt and pepper and maple syrup to taste. It's important to over-season it a little bit because by the time it's mixed through the broccoli it will be just right.

1. Cook your pasta according to package and set aside. Steam broccoli using your preferred method. If you like you can cook your broccoli with the pasta. Just be sure you’ve added enough water to the pot. To do this I would suggest adding the broccoli to the cooking pasta 3 minutes before pasta is done. Broccoli is at it’s best when it turns its brightest green.
2. In a medium saucepan, heat oil over medium heat, add the flour and whisk until smooth. Continue to cook for another 1 1/2 minutes. Slowly add in the almond milk and continue to whisk until smooth. Add in garlic powder, onion powder and salt to taste. Turn heat to medium low and cook another 8 minutes until sauce thickens, stirring frequently. Remove from heat and add optional nutritional yeast. Stir until well incorporated and taste for flavor adding more salt or garlic/onion powder as needed.
3. Using the pot you cooked the pasta in, toss together the pasta, broccoli and sauce. Serve with fresh cracked pepper. For a little heat, try adding a dash or two of red pepper flakes.
4. Serves 4 – 6

Frequently Asked Questions

What are some simple vegan recipes?

Prepare the marinade by combining ¼ cup tamari, ¼ cup vegetable broth, 2 Tbs. olive oil, 2 minced garlic cloves, 1 tsp. each dried thyme, paprika and ground cumin, ½ tsp. turmeric, ½ tsp. kosher salt and ¼ tsp. black pepper in a deep bowl and whisk. Add the tofu to the marinade and make sure all the pieces are covered.

What is the best Broccoli recipe?

Instructions Preheat oven to 425 F. Place the broccoli in a large bowl. Add the olive oil, garlic, salt, and pepper and stir to get the broccoli completely coated. Roast in the oven for 20 to 25 minutes, until the broccoli and all of the other yumminess is browned. I stir the broccoli up one time after about 15 minutes.

Is broccoli the healthiest food?

Broccoli provides the most health benefits if you eat it raw because some of the nutrients in broccoli are sensitive to heat or may leach out into cooking water, including vitamin C, folate and some of the phytochemicals. Steaming broccoli instead of boiling or stir-frying it will help minimize any nutrient losses.

What is the best vegan chili recipe?

Directions. Cook and stir until onion is tender, then mix in the celery, green bell peppers, jalapeno peppers, garlic, and green chile peppers. When vegetables are heated through, mix in the vegetarian burger crumbles. Reduce heat to low, cover pot, and simmer 5 minutes. Mix the tomatoes into the pot. Season chili with chili powder and pepper.
