1. Peel potatoes, then cut into ½" cubes. Place potatoes in a large pot, then cover with luke warm water. Bring to a rapid boil then cook until potatoes are very tender, about 10-12 minutes. A knife should easily pierce through the potatoes with no resistance.
2. While the potatoes cook, add heavy cream (or whole milk), butter, and smashed garlic cloves to a sauce pan. Bring to a simmer and heat for 10 minutes. Discard garlic cloves, then set aside until needed.
3. Drain potatoes, then immediately transfer to a ricer or foley mill fitted with the attachment with the tiniest holes. Place the foley mill over a large bowl, then begin to turn the handle to press the potatoes through. You will have to do this in phases, as not all potatoes will fit at once. The potatoes will fall into the bowl below. Repeat until all potatoes are riced.
4. To the bowl of potatoes, add warmed heavy cream and melted butter, sour cream, chives, salt, and pepper. Stir to combine. Serve with additional chives on top. Enjoy immediately!

1. Place the cubed sweet potatoes in a large saucepan or Dutch oven and add enough water to cover by about 1″. Add 1 teaspoon of the salt and bring the mixture to a simmer over medium-high heat. Reduce the heat and simmer, uncovered, until the potatoes are tender (in other words, it’s easy to slide a fork in and out), about 9 to 12 minutes.
2. Drain well, then return the potatoes to the pot. Mash the sweet potatoes to your desired consistency.
3. Promptly add almost all of the green onion and parsley, reserving a small amount of each for garnish. Add the garlic, and stir to combine. Then stir in most of the sour cream (reserve roughly 1 tablespoon for garnish), all of the butter, and the remaining 1 teaspoon salt. Season to taste with additional salt (I usually add another 1/4 to 1/2 teaspoon) and freshly ground black pepper.
4. Transfer the mashed potatoes to a serving bowl and swirl the reserved sour cream onto the top with a spoon. Sprinkle with the reserved green onion and parsley, drizzle the top lightly with olive oil, and finish with a sprinkle of pepper.

1. Peel the potatoes and cut into large cubes.
2. Add potatoes to the Instant Pot and cover with just enough cold water to submerge most of the potatoes. It’s fine if they are not completely underwater as they will still cook from the steam. Season with 1.5 teaspoons of salt (don’t worry, not all of that salt is absorbed during cooking!)
3. Secure and lock the lid; make sure the pressure handle is pointing to Sealing on Duo Classic. Select Manual/Pressure Cook and adjust the timer to 2 minutes on HIGH pressure. After a few beeps/seconds, the ON sign will come on indicating the pot is heating up and the pressure is building; pressurizing will take about 5-7 minutes and then the 2-minute timer will begin.
4. Once the timer is done, release the pressure manually after a couple of minutes. Press the steam knob down gradually (or point to Venting on older models).
